Corrections: I wish I could go to Germany during/for this summer vacation. It would be a great tour. I would [would, not will, because you are not sure that you are going to Germany] go to appreciate the scenery there, especially in Berlin. and I will go to see the architecture in different cities, admiring the good design of it, and of course, it would be a great time for shopping. It would be a wonderful tour!
Aside from the small mistakes that you made, this was very good! Keep studying!
I wish that I would go to Germany (during)this summer vacation. It would be a great tour. I will go to appreciate the scenery there, especilly(especially) in Berlin(; if you mark (;)then after that you will not use and )and I will go to see the a(r)chitecture in differrent cities, admiring the good desigh(design) of it and i think it would be a great time for shopping. It would be a wonderful tour!

Can I add a few comments?
1. I wonder "this summer vacation" can be used without a preposition like "for" or "on". "this summer vacation" may not be an adverb phrase, whereas "this summer" is. I am not sure. Your major is English, so I think you know better.
2. "I will go to..." could be changed as "I would like to...". Because you start the writing with "I wish I could..." you might as well follow the same tense.
3. "I will go to see.." can be written as "I would like to see.."
