The verb "ir," when conjugated in first person preterite, is "fui."
"Vacation" is spelled "vacaciones."

La última vez que fuí a vacaciones fué el verano pasado a un vaccacoin era el verano pasado. Fuí a Irlanda con mi familia en un avión. Fué una semana. :)
Hi Emma, you can eliminate de article in the second sentence. "Fuí a Irlanda con mi Familia en avión". Without "un".
Era "por" una semana.

"La última vez que fuí de vacaciones fue el verano pasado. Fui a Irlanda con mi familia en avión. El viaje duró una semana."
Some notes: In spanish the verb include the subject; in this case "I". "la última vez que yo fuí". Is not bad but is better without "yo". The verb must be "fuí" because is past simple (last year). About the word "vacaciones": As well as in english "holidays", it couldn´t be one holidays or a lot of holidays in this case because you are talking about general action of going holidays so you must delete "a un". The correct form is "irse de vacaciones" (in this case: "fuí de vacaciones").
Also you must delete "un" before "avión" as well as in english "by plane" "en avión"
