Frank speaking, I don’t think the model, “那个男人是医生; 他不是教师”, is a good one. Normally, Chinese say that “那个男人是医生, 而不是教师。” So, in your case, I think the following is better:
这个男人不是医生, 也不是护士, 而是学生。那个女人不是技术工人, 也不是公共汽车司机,而是警官。你不是邮递员, 也不是教师, 而是厨师。我不是秘书, 也不是经理, 而是科学家。
Thus, you see that “不是…也不是…而是” actually is a very useful structure. Anyway, this time you are only one step away from perfection. :)这个男人不是医生, 也不是护士, 他/这个男人是学生。那个女人不是技术工人, 也不是公共汽车司机, 她/那个女人是警官。你不是邮递员, 也不是教师, 你是厨师。我不是秘书, 也不是经理, 我是科学家。
